It's simple to change the color of an Outlook 2003 Note from yellow to green, blue, pink, or white.
If the Note is on your Desktop, click on the top-left note icon. Select "Color", then your note color from the popup window.
If you are in the "Notes" view inside Outlook 2003, right-click on a note. Select "Color", then your note color from the popup window.
